Ingredients

  • Puff pastry

  • Approximately 1 cup pesto

  • 1 Tbsp mayonnaise

  • Fresh corn, cut off the cob

  • Parmesan cheese blend

  • Cherry tomatoes

  • Fresh basil

Directions

  1. Preheat the Oven:
    Preheat the oven to 400°F.

  2. Prepare the Puff Pastry:
    Fold the edges of the puff pastry to create a border and help prevent the heavier ingredients from falling off. Do not roll out the pastry to make it larger.

  3. Dock the Pastry:
    Use a fork to gently dock the pastry so air can flow through and help prevent the ingredients from sliding off.

  4. Prepare the Pesto Mixture:
    In a bowl, combine the pesto with the mayonnaise. The mayonnaise helps mellow the bite of the pesto. Spread the mixture evenly over the puff pastry.

  5. Add the Toppings:
    Layer the fresh corn, Parmesan cheese blend, and cherry tomatoes over the pesto mixture.

  6. Finish and Bake:
    Top with additional cheese and fresh basil. Bake in the preheated oven at 400°F for approximately 25 minutes, or until the pastry is puffy and golden.
