Serves: 4
Ingredients
-
Puff pastry
-
Approximately 1 cup pesto
-
1 Tbsp mayonnaise
-
Fresh corn, cut off the cob
-
Parmesan cheese blend
-
Cherry tomatoes
-
Fresh basil
Directions
-
Preheat the Oven:
Preheat the oven to 400°F. -
Prepare the Puff Pastry:
Fold the edges of the puff pastry to create a border and help prevent the heavier ingredients from falling off. Do not roll out the pastry to make it larger. -
Dock the Pastry:
Use a fork to gently dock the pastry so air can flow through and help prevent the ingredients from sliding off. -
Prepare the Pesto Mixture:
In a bowl, combine the pesto with the mayonnaise. The mayonnaise helps mellow the bite of the pesto. Spread the mixture evenly over the puff pastry. -
Add the Toppings:
Layer the fresh corn, Parmesan cheese blend, and cherry tomatoes over the pesto mixture. -
Finish and Bake:
Top with additional cheese and fresh basil. Bake in the preheated oven at 400°F for approximately 25 minutes, or until the pastry is puffy and golden.
